One of my favorite days of the week is Sunday. We usually go to church in the morning, and then come home and relax the rest of the afternoon. We change back into sweatpants, and spend the day watching football, realizing on the couch, and gearing up for a new week ahead. I like to do something low key for dinner on Sundays, something that doesn’t take a ton of prep work or make a huge mess in my kitchen. This chili fits the bill perfectly. Super easy to make and makes the house smell awesome as it simmers away in the crockpot. It also makes a ton, so we have lunches for the rest of the week, or plenty to store in the freezer for later.

Crockpot Chili

The prep work for this chili was made even easier by my new Calphalon Self-Sharpening knives! Every home chef needs a good set of knives, and seriously, these things are amazing. My old knife set was a wedding gift from almost 5 years ago, and to be honest, I’ve never sharpened them. It seemed like a pain, and I just never got around to it.  These knives feature SharpIN Technology, ceramic sharpeners that are built into the knife block that automatically sharpens the knives with every use at the perfect angle. Serves: 8-10 servings
Ingredients
  • 1 Tablespoon olive oil
  • 2 pounds lean ground beef
  • 1 medium red or yellow onion, peeled and diced
  • 4 cloves of garlic, minced
  • 2 (15 ounce) cans dark red kidney beans, rinsed and drained (**see below for substitution ideas)
  • 2 (15 ounce) cans tomato sauce
  • 2 (14 ounce) cans diced tomatoes
  • 1 (15 ounce) can light red kidney beans, rinsed and drained
  • 1 (4 ounce) can chopped green chiles
  • 1 cup beer or beef broth
  • 2 Tablespoons chili powder
  • 1 Tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ½ teaspoon black pepper
  • 1 lbs smoked kielbasa, sliced in ½ inch sections
  • (Optional toppings: shredded cheddar cheese, crushed tortilla chips or strips, thinly-sliced green onions, sour cream, salsa, etc.)
Instructions
  1. In a large saute pan, heat the oil over medium-high heat. Add in the ground beef, onion, garlic and cook for 7-10 minutes or until the beef is browned. Drain the excess fat, then transfer to beef to the slow cooker bowl. Add the kielbasa to the pan and lightly brown, then add to the slow cooker.
  2. Add the remaining ingredients to the slow cooker, and stir to combine. Cover and cook on low for 6-8 hours, or on high for 3-4 hours. Taste, and season with additional salt and pepper or seasonings if need be.
  3. Serve warm, with desired toppings.
